  • 2 Tablespoons unsalted butter
  • 2 Tablespoons extra light olive oil
  • 1 cup white whole wheat flour
  • 1½ teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1 cup skim milk
  • 1 teaspoon vanilla extract
  • 12 oz. frozen mixed berries

  1. Heat oven to 350°F. Add butter and oil to an 8-inch square baking dish and place in oven to melt, about 5 minutes.
  2. Combine flour, baking powder, salt, and sugar in a large mixing bowl. Add milk and vanilla extract and stir to form a smooth batter. Add melted butter and oil to mixture.
  3. Pour batter into hot baking dish. Pour berries over batter evenly. Bake until golden brown, about 50–60 minutes. Let cool for 15 minutes before serving.
