Fruit & Nut Oatmeal Cookies

  • 1 cup unsalted butter, room temperature
  • 3/4 cup light brown sugar, lightly packed
  • 3/4 cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 cups old-fashioned oats or quick oats
  • 1/2 cup dried cranberries
  • 1 teaspoon orange zest
  • 1/2 cup chopped walnuts
  • 1 ½ teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg

  1. Preheat oven to 350°F.
  2. Beat butter, brown sugar, granulated sugar and vanilla in a large bowl until creamy.
  3. Add the eggs, one at a time, beating well after each addition.
  4. In a separate bowl, sift together flour and baking soda and add to the butter mixture; stir just until combined.
  5. Stir in oats, cranberries, orange zest, walnuts, cinnamon and nutmeg.
  6. Drop by rounded tablespoons onto ungreased cookie sheets.
  7. Bake for 10-12 minutes or until the tops of the cookies are golden brown.
  8. Cool to room temperature on cookie sheets.
  9. Store at room temperature in airtight containers.
