  • 2 cups turkey stock
  • 1/4 cup pearl barley
  • salt to taste
  • 1/4 teaspoon black pepper
  • 1 small onion chopped
  • 1/4 cup chopped parsley
  • 1/2 cup chopped celery
  • 1/2 cup sliced carrots
  • 1/2 cup drained, canned whole kernel corn
  • 1 cup cubed cooked turkey

  1. Combine stock, barley, salt, pepper, onion, and parsley in a 3 qt saucepan. Bring to a boil; reduce heat, cover, and simmer for 40 minutes, stirring occasionally.
  2. Add more stock if necessary. Add celery and carrots; cook for an additional 20 minutes stirring frequently.
  3. Add corn and turkey; bring to a boil. Boil for 2 minutes to heat through.
