ingredients

  • 4 ears of corn, unhusked
  • 1/4 cup butter, softened
  • 1 Tablespoon olive oil
  • 1/2 teaspoon lime zest
  • 2 Tablespoons shredded Parmesan

  1. Soak unhusked corn in cold water 10 minutes. Meanwhile, for the lime butter, in a small bowl stir together butter, oil and lime zest; cover and refrigerate.
  2. Coat grill rack with non-stick cooking spray. Preheat grill to medium-high (350°F–400°F). Place corn on grill. Grill 10 –12 minutes or until tender, turning once or twice. Let cool slightly.
  3. Remove husk and silks.* Spread lime butter mixture evenly on corn. Sprinkle with Parmesan, season with salt and pepper to taste, and serve.

*For a lightly grilled look, return husked corn to grill 3–5 minutes before spreading lime butter.
