What you'll need: 1 lb (450g) of diced chicken. 1/2 cup (150g) mixed vegetables (carrot & green beans). 14 oz (400 ml) coconut milk. 2 cups (380g) of jasmine rice. Cooking instructions: 1. Heat two teaspoons of oil in a medium saucepan. 2. Add chicken pieces and cook on high for 30 seconds or until seared. 3. Pour simmer sauce and coconut milk in pan, stir contents, (over pan with lid and reduce heat to simmer for 10-15 minutes or until meat is fully cooked. 4. Add mixed vegetables and cook for 3 minutes or until tender. 5. Serve with steamed rice. Our tip: for a delicious alternative try cooking with beef, seafood or vegetables.
