Keep frozen. Prepare me! Saute from frozen with a little oil in a non stick fry-pan over medium/high heat until browned (2-3 mins each side). Tip: Let rest for 1 minute and serve. Do not overcook. Cook until internal temperature reaches minimum of 165 degrees F. Meal ideas! Lightly dust each scallopini with flour and saute as above. Remove scallopini from pan, add capers and white wine or vegetable stock. Reduce by half. Turn off heat, whisk in butter (or non-dairy option) and lemon juice. Return scallopini to pan and coat with sauce. Garnish with fresh herbs. Dinner's on! Use in place of chicken in your favorite recipes. Gardein? scallopini can be diced or cut into strips for stir fry, fajitas, pot pie filling or browned in pan for a great hot sandwich.
