Mom’s Cheesy Chicken & Rice Casserole. Prep Time: 10 minutes. Cook Time: 1 hour. Makes 6 servings. You Will Need. 1 pkg. McCormick Seasoning Mix. 1 lb. boneless chicken breasts or thighs, cut into 1-inch cubes. 3/4 cup. Uncooked long grain rice. 1 1/2 cups. Water or chicken stock. 1 cup. Milk. 2 cups. Fresh broccoli florets. 1 cup. Shredded cheddar cheese. Directions: 1. Preheat oven to 400 degrees F. Place chicken and rice in 2-quart baking dish sprayed with no stick cooking spray. 2. Whisk water, milk and seasoning mix in medium bowl until well blended. Pour over chicken and rice. Cover with foil. 3. Bake 40 minutes. Remove foil. Stir in broccoli. Sprinkle evenly with cheese. Bake, uncovered, 20 minutes longer or until rice has absorbed most of the liquid and broccoli is tender. Kitchen Tips: Substitute frozen broccoli for the fresh broccoli; no need to thaw! Substitute any variety of shredded cheese in place of the Cheddar.
