Originally from Naples, Reginetti or Mafaldine pasta, means "little queens" in honor of Princess Mafalda of Savoy from the 12th century. Our unique whole grain blend features an organic, stone milled hard red flour from New York's Hudson Valley. Cooking instructions: In a large pot, heat four quarts of salted water and bring to a boil. Add the pasta and stir. Cook for nine to ten minutes, stirring occasionally and then strain. Reserve two to three tablespoons of pasta water to add to your sauce. Cook time 9-10 minutes.
