Boil: Soaking Method: To 1 lb (about 2-1/4 cups) of beans add 6-8 cups of hot water. Boil for 2 minutes. Remove from heat. Cover and let stand 1 hour or soak in 8 cups cold water overnight for at least 8 hours in the refrigerator. Drain and rinse beans. Simmer: Cooking Instructions: Bring 6 cups water to boil. Add drained and rinsed beans, bring it back to boil, and then lower the heat to simmer. Simmer gently with a tilted lid until desired tenderness is reached, about 1-1/2 - 2 hours.
