Soaking Method: To 1 lb (about 2-1/2 cups) of beans add 6-8 cups of water. Boil for 2 minutes. Remove from heat. Cover and let stand 1 hour. Or let stand 8 cups cold water overnight for at least 8 hours in the refrigerator. Drain and rinse beans. Cooking Instructions: Bring 3 cups water and 1/8 tsp. salt (Optional) to a boil. Add 1 cup rinse pearly barley. Cook for 45 minutes over low heat until grains are tender but still chewy. Add cooked pearl barley to vegetable or bean soup.
